Balsamic White Swai Recipe

Balsamic White Swai Recipe

This is one of the easiest ways to quickly cook fish! I have mentioned before that I love the Target brand of Market Pantry frozen white swai fish fillets, we keep these in the freezer always. Since my surgery I have had some limits on my diet in stages, but fish is one of the first regular foods I could have. I just made this for myself, but I know Hubby and T will love it also so next time it will be a quick and easy family meal. Mahi Mahi with Cilantro and Lime Recipe

Mahi Mahi with Cilantro and Lime Recipe

Hubby and I really enjoy fish so I have been looking for and creating different recipes for us to enjoy for dinners. While I would love to have fresh Mahi Mahi all the time, it is kind of pricey here in Missouri (Whole Foods does carry it and it is fantastic). Target carries a line, Simply Balanced, of frozen fish fillets and I buy the white swai often but I ran across the same brand of Mahi Mahi recently and grabbed that. Frozen fish is not all the same, it is kind of hit or miss with brands. Luckily, I … Continue Reading →
Grandma Eggs Please: Throwback Thursday

Grandma Eggs Please: Throwback Thursday

It is time for Throwback Thursday again. This week I thought I would share a story from my childhood that I’m sure some of you can relate to. My Grandma Hoelker is no longer with us sadly, but I have so many wonderful memories of her. She was not only that kind and comforting type of Grandma, but she was also a lot of fun. I still miss her dearly. So to get to my story. One summer I was on vacation with my parents and brother. I think this was the year we went to Springfield, Chicago, and Wisconsin … Continue Reading →
Recipes for a great Memorial Day Weekend Cookout

Recipes for a great Memorial Day Weekend Cookout

Memorial Day Weekend is a big time for parties and grilling. Hubby loves to grill and has shared some recipes here on my blog. Along with grilling just meat you need some veggies and salads too. I went through my blog to find some fun recipes I have shared in the past that you might like to try yourself this holiday weekend. Let’s start with the meat! A classic is barbecue pulled pork. Now this takes some time but it is worth it. Hubby shares how to smoke a pork butt to make the best BBQ Pulled Pork! If you … Continue Reading →
Tasty Tuesday Menu Plan – May 25 Edition

Tasty Tuesday Menu Plan – May 25 Edition

It has been a while since I’ve done a Tasty Tuesday, and this week I’m really not making a menu plan either. Why you ask? (I hear you saying why, I know you are dying to know!) The reason is because right now I’m cruising Alaska and not cooking the entire week. Instead of planning the meals, shopping for supplies, and prepping and cooking the food; this week my only serious consideration is what to order from the fabulous menus or what to get on the buffet. We will be dining at the Nouveau Supper Club one evening which I … Continue Reading →
Grilled White Ruffy

Grilled White Ruffy

I thought I would share a recipe today because it was yummy! One of our newer finds at the fish/seafood counter at my local grocery store is White Ruffy (also called Swai or Basa). It is a very mild fish and very versatile. I’ve cooked it in several different ways the past several weeks, but today I had hubby throw it on the grill. We served this with Sesame-Ginger Rice Pilaf (Near East brand box mix) and some peas (although the peas were a bit strong). 1 lb White Ruffy fish fillets 1/3 cup soy sauce juice of 1 lime … Continue Reading →
